The story of Farm Country Butchery began long before the processing plant was built in 1963.
It began with Pete Mincoff.
An immigrant from Bulgaria after World War II, Pete came to America with very little and had to fight for everything he built. Through grit, sacrifice, and relentless work, Pete eventually purchased the 80-acre farm where Farm Country Butchery still stands today.
But when Pete arrived, the farm was not open pasture. It was solid timber.
If Pete was going to build a future for his family, he needed land for farming and lumber for a home. So, with the rugged resourcefulness that would come to define the Mincoff family, Pete began clearing trees, milling lumber, and building with his own hands.
What started as necessity soon became opportunity. Before entering the meat business, Pete built and operated a lumber mill while raising a family and farming the land alongside them. The kids helped work the farm and the mill, learning early the values of hard work, self-reliance, and serving the local community.
Eventually, Pete recognized another need. Local farmers and families needed a place to harvest and process meat.
So, in true Mincoff fashion, Pete built one.
The earliest version of Mincoff’s Meat Market was humble but hardworking. A corner of the lumber shed was enclosed to serve as the slaughter floor, while the basement of the family home became the cutting room. Every quarter was carried down the stairs by hand, and every pound of finished product was hauled back up.
As the business grew, so did the family’s connection to the craft.
In 1963, the processing plant that still stands today was built in Conrath, Wisconsin. Pete’s son, Naiden, eventually carried the operation forward, and generations of Mincoff family members worked in the butcher shop learning skills and values that still run deep in this community today.
Farm Country Butchery exists to honor that legacy while continuing to evolve for the needs of today’s producers and marketers.
