A Legacy Built by Hand

Farm Country Butchery was formally established in 2023, when Northstar Bison reacquired the facility with a clear purpose: to strengthen its ability to serve small- to medium-sized, gate-to-plate farmers and marketers who value quality, integrity, and trust in their processing partner. While the Farm Country name is new, the story of this facility, and the hands that shaped it, runs much deeper.
The roots of this butcher shop stretch back more than six decades, and even further in practice. In the late 1940s, the Mincoff family began butchering and selling meat out of necessity; working to save the family farm. What started as a means of survival soon became a service to others. Local farmers began relying on the Mincoffs for custom butchery, with beef processed and cooled in a small shed behind the house, then carried down basement stairs for cutting and wrapping.
As demand grew, so did the operation. In 1963, the business outgrew the home entirely, prompting the construction of a dedicated slaughter floor, coolers, and cut room. Mincoff Meats was officially born. For the next 42 years, the Mincoff family faithfully served their community, providing custom processing and supplying meat to local convenience stores, earning trust one animal, one customer, and one handshake at a time.
Today, Farm Country Butchery carries that legacy forward.
The facility is USDA inspected and equipped to serve a wide range of customer needs, with an emphasis on processing for retail sale. While the food industry has changed dramatically over the past 60 years, our commitment to doing things the right way has not. We continue to honor the foundation laid by those before us, right down to the old-fashioned, Bavarian-rooted Mincoff family sausage recipes that remain unchanged.
